Asian Chicken Turkey Lettuce Wraps

You will need to buy a head of lettuce!

Instructions:
Let sauces and chicken mixture thaw in the fridge.

Heat chicken mixture in a large skillet until heated through.

To cook rice noodles: Bring a large pot of water to a boil. Add rice noodles and cook about 4 minutes until soft. Drain.

Assemble lettuce wrap by putting a small amount of chicken in the middle of a piece of lettuce. Add rice noodles and wrap up. Dip in one of the sauces and enjoy.

  1. Having them tonight. Couldn't get any lettuce worth a crap at Target today, so am re-inventing as a noodle dish... will give feedback soon...

  2. I really liked these. I would give them an 8/10 and Ross would give them a 7/10. Lettuce wraps are one of my favorite meals though.

    Oh, I also couldn't tell that they were turkey. I don't think it made a difference. I'll be interested to know what you think.

  3. I made this Sunday night, for my mom and me. I used some of Shannon's rice noodles and served it over the noodles rather than lettuce.

    I really don't understand rice noodles and don't know how to prepare them. These came out okay. The package says just to soak in hot water, not to boil them like pasta, but I think they are always underdone using that method.

    Anyway, I soaked the noodles in hot water for a long time. Then I sliced scallions and pan fried the noodles with the scallions in a little sesame seed oil. Then tossed with the turkey mixture and some of Shannon's sauce.

    My mom and I thought it was excellent. Adam had a small bowl later and agreed. Lots of good ginger flavor.

    Personally, I think it would have been a smidge better with ground chicken. Or I might have liked a ground turkey/ground pork combo. I have an aversion to ground turkey that I can't explain. It doesn't taste bad to me, it's just a mental block.

    All in all, I thought this was really good. And versatile. Would work over rice as well.

  4. I agree that you can't cook rice noodles by soaking them in hot water. We always bring a pot of water to a boil, add the noodles and cook them about 3-4 minutes until soft. Then we drain and serve them.

    I wonder how you would have felt about the wraps if you hadn't known they were made from turkey. My mom was in the middle of eating one and saying how good it was. I told her, "You know, I made those with ground turkey." And she said she wished I hadn't told her that. They taste perfect until you know they ar made of turkey and then you can kind of subtley taste it.
