Amanda's Crab Cakes

  1. I made these by cooking them in a nonstick skillet with tiny bit of butter for 5 minutes, then flipping them. At that point, I realized they needed quite a bit more oil to make them crispy. I poured in another couple of tablespoons and cooked them 5 minutes, then turned them over again for a couple more minutes to crisp up the first side.

    These were delicious. I think both Ross and I would give them an 8/10. The extra oil might have helped.

    The sauce was so-so. Ross didn't like it at all. (He thought it tasted like mustard, which he doesn't like.) It was okay, but not worth the effort that it seemed like Amanda put into it... mostly because it just seemed to cover up the delicious crab cake flavor.

    Also, there definitely wasn't enough for 4 servings. Ross and I ate 1.5 cakes each and gave the 4th one to Amelia.

    I served it with wild rice, steamed broccoli and a salad. It was a good dinner.

  4. Uhm.. we threw it away. But I had a thought about the sauce. Amanda said it was supposed to have capers in it and I think that might have helped it a lot.
